Cabernet Sauvignon

"Following the heat dome of June 2021, the remainder of the summer continued with intense heat and growing degree days well above the average. September cooled slightly and our three blocks of Cabernet achieved full ripeness underscored with vibrant acidity. Appropriate to lower yield and smaller berries, the quality and flavour of all three blocks was exceptional.

In 2021 all three blocks were hand harvested within a week of each other and fermented together in our two ton stainless tanks.

In the glass quiet at first, it begins to open in the company of air with scents of blackberry, roasted dark plum with mild overtones of cacao powder and baking spice. The palate is dark, dense, and broad shouldered with more flavours of baker‘s chocolate with hints of clove. Lined with a medley of grippy tannins that coat the mouth our Cabernet was built to age and will benefit from further cellaring and decanting for minimally another decade. A powerful wine for a thick rib-eye."
