Cabernet Sauvignon

As with our other varietals that we grow in our Shady Lagoon vineyard our volume of crop in all three of our Cabernet blocks was as well small. However, as expected from an almost perfect summer and fall weather the quality was outstanding. We commenced picking on Oct 15 with our upper (oldest block) and front (youngest) block and proceeded to co-ferment them in our open tank fermenters. The remainder of the grapes in our front cab block we harvested and co-fermented with our lower cab block four days later. By the end of November all three blocks were barrelled down together. All cab barrels were tasted and specifically selected for this wine the following September.

The range of fruit scents is from blackberry to rich black cherry with undertones of black currents.

On the second day there was a further burst of dark plums. Broad shouldered and stylish with firm and rounded tannins and well integrated barrel regime. Cocoa and black licorice frame the length and finish.

A hearty dish like beef pot-a-feu would be a great accompaniment.

We suggest cellaring all our red wines for at least a decade. However, they are to be enjoyed at release and beyond.
